This is one of the tastiest and easiest sides you can get on the table within 10 minutes! Being a universal accompaniment to almost any main dish, the humble potato can be elevated with any combination of fresh herbs and butter, lemon, or a vinaigrette, to round out any meal.
While the potatoes are boiling, chop the herbs and set out the butter or oil. Drain the potatoes, add enough butter or oil to evenly coat, add the herbs, salt & pepper, swirl the pot around to get everything coated, and you are done! As Clay always says, “Bon-App”!
Herbed Fingerling Potatoes
Ingredients
- 1 1/2 Lbs. Fingerling Potatoes washed
- 5 Tbls Butter Or 3-5 Tbsp of Olive Oil *See Notes
- 1/2 Cup Chopped Fresh Herbs (Parsley, Chives, Dill, Tarragon, Oregano, etc.)
- 1 Tsp Salt or to taste
- Pepper to taste
Instructions
- Place the potatoes in a pot, cover with water, and bring to a boil. Boil for 8-10 minutes, until you can place a knife in the middle of one of the larger potatoes and there is no resistance. Drain the potatoes and put them back in the pot.
- Immediately place in the butter, salt, and pepper. Place the lid on the pot and swirl around to coat the potatoes. (Swirling will keep them from breaking apart).
- Place in the chopped herbs, cover and swirl the pot again to coat the potatoes. Taste and adjust the salt and pepper as needed.
