FARMER’S MUSHROOM TOASTS

We think mushrooms and cheese, in any form, always make a perfect union! Whether on toasts or pizza, in pasta, ravioli, or risotto, they are a sublime combination, and an easy go-to for recipe creations.

We were inspired to create this one day while perusing the deli at our local grocer. The marinated mushrooms initially instigated the craving, and, (as fate would have it), the cheese section is just across the isle, along with the fresh baguettes. And just like that, our little inspiration became a reality.

This is a quick and easy hors d’oeuvre to put together, and can have numerous variations with the use of different cheeses and herbs. It’s as splendid for a party or a holiday gathering, as it is a mid-week dinner!

Farmer’s Mushroom Toasts

Ingredients
  

  • 1 Baguette 8”-12” long
  • Olive Oil To Brush on the Baguette
  • 7.5 Ounces Farmer’s Cheese We use Bellwether Farms Farmer’s Cheese, but Ricotta , Goat Cheese, or Boursin are fine too. *See Notes
  • 1 Tbsp Finely Chopped Chives *A “Heaping” Tbsp.
  • Salt to Taste
  • 1 Cup Marinated Mushrooms, chopped Marinated Mushrooms are usually found in the Deli or Olive Bar in most grocers, or in the pickled veg isle. **You can also use our Mushroom Sauté recipe for this.
  • 1 Tbsp Chopped fresh Chervil or Parsley. *Or your fresh herb of choice

Instructions
 

Prep

  • Allow the Cheese to sit at room temperature for 1-3 hours to soften.
  • Preheat oven to 400°F
  • Strain the Mushrooms for about 5 minutes before assembling toasts.

Toasts

  • Cut Baguette at a slight angle, into pieces approximately 1/2”-3/4” thick
    Brush each side of the bread with Olive Oil to lightly coat. (use a pastry brush or silicone brush.)
    Place the pieces onto a sheet pan and toast for 4-6 minutes, flip them over and toast for another 4-6 minutes, until lightly toasted.
    Remove from the oven and set aside.
  • Place the softened Cheese in a bowl and stir in the Chopped Chives and a pinch of salt. Taste to see if you need more salt, and if you like pepper, stir that in too.

Assembly

  • Spread about 1/2 Tbsp of Cheese onto each toast.
    Place on the chopped Marinated Mushrooms.
    Sprinkle with fresh Parsley and/or lemon zest.
    *If you like a little “zing”, add some chopped Calabrian Chiles

Notes

CHEESE:
1. If you use the Ricotta, it is best to place it in a fine mesh strainer or cheese cloth and allow it to drain for about 5 minutes before mixing it with the chives. This will remove any extra unwanted moisture. 
2. If you use Boursin, it is already seasoned, so there is no need to add the chives or salt. This is the quickest cheese option! 
OPTIONS:
1. You can play around with the cheese for this. You could eliminate the chives and the “mixing”, and just use Brie, Camembert, or St. Andres, (or something like these “spreadable” cheeses.
2. If you want to use fresh mushrooms, or have a warm topping, use our Mushroom Sauté recipe, and chop the mushrooms to fit on the toasts. 
3. You can change up the flavorings with the use of various herbs. If you don’t have chives, or want to use a combination, try others like Parsley, Chervil, Thyme, Basil, etc. Lemon Zest is always a nice finishing touch too.
