Place the potatoes in a pot, cover with water, and bring to a boil. Boil for 8-10 minutes, until you can place a knife in the middle of one of the larger potatoes and there is no resistance. Drain the potatoes and put them back in the pot.
Immediately place in the butter, salt, and pepper. Place the lid on the pot and swirl around to coat the potatoes. (Swirling will keep them from breaking apart).
Place in the chopped herbs, cover and swirl the pot again to coat the potatoes. Taste and adjust the salt and pepper as needed.

1. HERBS:You can use any single herb or combination of herbs that you like, or that are in season. We love any of the individual herbs listed, but a few of our favorite combinations are:
Parsley & Chives
Tarragon & Dill
Parsley & Oregano (finely choppped)
2. Other Options:Lemon - add the zest of a lemon and/or juice from 1/2 lemon when you add the butter.Lemon Salt - Finish with this tasty flavored large flake salt. Lemon Salt.Olive Oil - you can substitute this for the butter. Start with 3 Tbls of Oil and add more if the potatoes look dry. You can also combine the Butter and Olive Oil, just use 1/2 & 1/2. Vinaigrettes - try coating the potatoes with one of our favorite vinaigrettes for something unexpected. I love all things lemon, so any vinaigrette with lemon on potatoes tops my list. Also, our vinaigrette with lemon, garlic, shallot, and capers is excellent, making this like a warm potato salad...but they are all worth a try!
