ENDIVE CANAPÉS

When we entertain we like to have some small-bites for our guests to nibble on while having their aperitif. This is one of our repertoire staples as it looks beautiful, tastes delightful, and is almost effortless. The Boursin cheese makes this seem like a forbidden indulgence, but in reality, remains very light-about 20 calories per piece, if you wish to count.

There are many flavors of Boursin cheese, however we tend to prefer the more savory ones like Garlic & Fine Herbs or Basil & Chive. The company also launched a dairy free product in 2020, which could be a good alternative if you have guests with this sensitivity. There are many other dairy free spreadable cheeses on the market now, so it might be worth doing a little sleuthing by asking your dairy free friends about their favorites. Either way, this is an appetizer that is sure to please.

Endive Canapés

Ingredients
  

  • 3 Endive Red and White or a variety of colors
  • 1 Boursin Cheese 1 Box/Package
  • Garnish Microgreens, Sprouts, or Fresh Herbs

Instructions
 

  • Take the Boursin out of the fridge about 30 minutes before assembly, so that it’s soft. This will make it easier to spoon and spread on the Endive.
  • Slice off the ends of the Endive. Take off about 1/2” from the base.
  • Wash each Endive and separate the leaves on a kitchen towel. Gently pat dry.
  • With a small spatula or spoon, take about 1 Teaspoon of Boursin Cheese and place it just on the end of the Endive. Continue with the rest of the Endive leaves, and arrange on your serving tray. *(We usually estimate 4 per person.)
  • After assembly garnish with Microgreens, small Sprouts, or chopped fresh herbs like Dill, Parsley, or Thyme Leaves.
  • Serve as a single appetizer or pair it with your other favorites. We like to add a bowl of olives and nuts, which makes this a great starter trio.
