SUMMER’S HARVEST

Oh, the end of summer! It brings with it so many mixed feelings; a sudden onset of nostalgia for the recent three months, slowly, (maybe reluctantly), fading as we move towards the anticipation of fall. Before we completely let go of our summer, let’s celebrate its bounty, and those things that blossom to their fullest flavorful peak at the end of the season. Let’s also pause and be thankful for the time spent with loved ones, for memories only lived within vacations and weekend get-aways, picnics, trips to the water’s shore, and warm evenings lingering in conversation. The summer-especially this summer- has offered so much in which to be thankful.

Whether you have your own garden, frequent your local farmer’s market, or just enjoy the selection of seasonal items at your grocer, there is an abundance of produce to relish this time of year. The beauty of any vegetable harvest is the unlimited possibilities it offers. Mixtures of lettuces, shaved or grilled zucchini, raw or roasted carrots, sliced tomatoes, cucumbers, or gazpachos, freshly picked corn, raw or grilled peppers, radishes, asparagus, flavor-packed herbs … you get the idea!

Clay and I love to mix fresh lettuces and herbs with grilled, roasted, or sautéed vegetables of any kind. A simple mixture of lemon juice and olive oil, or your favorite variation of a vinaigrette, is all you need to make a dish complete. If you want to take things a step further, add a few dollops of creamy Burrata, or goat cheese, shave on some Parmesan or pecorino, or crumble on some blue cheese or Humbolt fog. Layer on some crispy prosciutto pieces, grilled meat or poultry, some chopped nuts, or maybe a few capers. If you like the sweet and savory idea, cut in some strawberries, blueberries, figs, or pears. The options are truly endless!

These are a few salads we’ve created over the years, mostly inspired by what was in season at our farmer’s market. We don’t have a “recipe” for each one, but we hope the images can offer ideas or inspiration for you to be creative, to enjoy the flavors only summer provides, and to savor it all-the abundance of the garden’s harvest as well as the many gifts of life-as we transition into the next season.
